Description
This quick weeknight staple delivers standard taco flavor without complicated prep.
It can easily be served in warm tortillas, over cilantro-lime rice for a high-protein bowl, or on top of fresh greens for a lower-carb option.
Ingredients
1 lb lean ground beef (90/10 or 93/7) or extra-lean ground turkey
1 tbsp avocado oil or olive oil
1 packet taco seasoning (or 1 tbsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, and a pinch of salt)
1/4 cup warm water
8 small high-protein flour tortillas or corn tortillas (or substitute greens/rice base)
Recommended Toppings
1 cup black beans (rinsed and drained)
1/2 cup shredded Mexican blend cheese or sharp cheddar
1/2 cup fresh salsa or pico de gallo
1 medium avocado, diced
Fresh cilantro and lime wedges for serving
Step-by-Step Instructions
Brown the Meat: Heat avocado oil in a skillet over medium-high heat. Add ground beef or turkey and cook for 6–8 minutes, breaking it up with a spatula until fully browned and cooked through. Drain any excess liquid if necessary.
Season: Lower heat to medium-low. Sprinkle taco seasoning over the meat and pour in 1/4 cup warm water. Stir thoroughly and simmer for 2 minutes until the sauce thickens and coats the meat evenly.
Warm Tortillas: While the meat simmers, heat tortillas in a dry pan for 30 seconds per side or warm them wrapped in a damp paper towel in the microwave for 20 seconds.
Assemble & Serve: Divide meat into tortillas, bowls, or salad bases. Top each portion with black beans, cheese, salsa, avocado, and fresh cilantro. Serve immediately with a squeezed lime wedge.
Prep & Storage Tips
Meal Prep: Double the meat batch and store in an airtight container for up to 4 days.
Pro Tip: Keep cooked taco meat pre-portioned in glass containers for quick lunch reheat throughout the week.
