Ingredients
2.5–3 lbs pork loin or boneless pork shoulder (trimmed of excess fat)
3/4 cup lower-sugar or sugar-free BBQ sauce
2 tbsp apple cider vinegar
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt and black pepper
12–16 Hawaiian sweet rolls or brioche slider buns
Optional Serving Sides
Pre-made light coleslaw or broccoli slaw
Steamed green beans or fresh sliced cucumber salad
Step-by-Step Instructions
Load Slow Cooker: Place pork in the bottom of the slow cooker insert. Sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper evenly over the meat.
Add Liquids: Pour apple cider vinegar and 1/2 cup BBQ sauce over the top of the pork.
Cook: Cover with lid and cook on LOW for 6–8 hours (or HIGH for 4 hours) until meat is tender and easily yields to a fork.
Shred & Sauce: Remove pork to a cutting board or shred directly in the slow cooker using two forks. Stir in remaining 1/4 cup BBQ sauce to coat.
Assemble: Split slider buns, spoon shredded BBQ pork onto each roll, top with slaw if desired, and serve immediately.
